Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the dish and become tender, absorbing the sauce as they bake.
Butter
Fat that softens the onion and carries flavor into the sauce.
Onion
Adds savory aroma and sweetness as it cooks gently in butter.
Milk
Forms the liquid base of the sauce, giving it creamy body.
Flour
Thickens the milk into a smooth sauce that clings to the potatoes.
American cheese
Melts into the sauce, adding richness and a smooth, creamy texture.

The step that matters

Thickening the milk with flour. Flour must be cooked into the butter and onion mixture before or as the milk is added, or it will leave lumps. Once the milk is bubbly and blended in, the starch swells and thickens the sauce so it clings to the potatoes.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (potato, butter, milk, flour, cheese):

  1. Chivebetter flavor fit
  2. Asparagusabout as good a flavor fit
  3. Onionthe original
  4. Capsicumabout as good a flavor fit

Fit is the average pairing score against potato, butter, milk, flour, cheese. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
