Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream cheese
Provides the dense, creamy body that sets into the cheesecake structure.
Eggs
Coagulate during baking to set the batter into a firm, sliceable custard.
Sour cream
Adds moisture and tang, keeping the filling smooth and tender.
Cornstarch
Stabilizes the batter so it sets smoothly and resists cracking.
Shrimp
Supplies the main seafood flavor and is cooked before folding into the batter.
Smoked sausage
Adds smoky, savory flavor and fat to the filling.

The step that matters

Cool the shrimp mixture before folding it into the batter. Hot filling would begin to cook the eggs unevenly and can thin or crack the batter, so letting it cool for 15 minutes helps the cheesecake set smoothly.
