Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round steak
Forms the meat base that becomes tender during long, moist baking.
Flour
Forms the batter structure that sets over the steak as it bakes.
Baking powder
Releases gas that makes the batter rise and lighten as it bakes.
Egg whites
Beaten whites trap air, adding lift and a lighter texture.
Egg yolks
Add richness and help bind the batter.
Shortening
Fat that browns the steak and flavours the pan drippings.

The step that matters

Folding in the beaten egg whites. Beaten egg whites hold air that gives the batter lift. Folding gently keeps that air in; stirring vigorously deflates the foam and produces a denser, flatter crust.
