What each ingredient does

Eggs
Set the custard, binding the soaked bread into a sliceable, tender pudding.
French bread
Forms the porous base that soaks up the custard and holds its shape.
Semisweet chocolate
Melts into the custard, adding rich chocolate flavor and a soft, fudgy texture.
Chocolate milk
Supplies the liquid for the custard, carrying chocolate flavor through the dish.
Butter
Adds fat for richness and a tender crumb in the bread.
Cocoa
Intensifies the chocolate flavor and deepens the color of the custard.

The step that matters

Pour the water bath to 1 inch and bake until just set. Water around the ramekins moderates the oven heat so the egg custard cooks gently. Overbaking or skipping the water can make the custard grainy, cracked, or rubbery.

Swap the cocoa
