Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream cheese
Provides the rich, dense body that gives the cheesecake its structure and creamy texture.
Egg substitute
Sets during baking to give the filling its firm, sliceable structure.
Lemon juice
Adds acidity that gives the filling its bright, tangy flavor.
All-purpose flour
Stabilizes the filling so it holds its shape and is less likely to crack.
Graham cracker crumbs
Form the base crust that holds the filling together.

The step that matters

Bake until the center is almost set. Over-baking makes the egg-based filling tight and dry, and it can crack as it cools. Pulling it out while the center still jiggles lets residual heat finish setting it smoothly.
