Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set in the oven.
Flax meal
Absorbs liquid and gives the muffins a dense, moist, hearty texture.
Oil
Adds moisture and tenderness, keeping the muffins soft after baking.
Baking soda
Reacts with the batter to produce gas that helps the muffins rise.
Baking powder
Provides additional lift so the muffins rise in the oven.

The step that matters

Bake until just lightly browned and set. Flax-based batter can turn dry and dense if overbaked, so pull the muffins once they are lightly browned and spring back gently to the touch.
