Lime Garlic-grilled Cornish Hens

Ingredients

Directions

Prepare the hens

  1. Cut the wing tips off the hens.

  2. With poultry shears, cut down along both sides of the hen's backbone to remove it and discard.

  3. Open the hen up and cut it in half down the center of the breast.

  4. Repeat with the other hen.

Marinate

  1. In a measuring cup, stir together the lime juice, garlic, soy sauce, orange zest, and red pepper flakes.

  2. Put the hens in a resealable plastic freezer bag. Pour the mixture into the bag. Seal the bag.

  3. Squish the bag so the marinades coat evenly.

  4. Place the bag in a bowl in case of leaks.

  5. Marinate the hens in the refrigerator at least 2 hrs or overnight.

Grill and serve

  1. Heat a barbecue grill to medium.

  2. Oil the grill.

  3. Remove the hens from the marinades.

  4. Drain the remaining marinades into a small saucepan. Bring the liquid to a full boil. Boil for 2 minutes.

  5. Place the hens skin side down on the grill. Baste with some marinades.

  6. Grill until lightly browned on the underside, about 10 minutes.

  7. Use a metal spatula to loosen the hens and turn. Continue grilling. Baste occasionally. Turn and move as necessary.

  8. Cook until no longer pink in the thickest part, about 15 to 20 minutes longer.

  9. Discard any remaining marinades.

  10. Serve the hens. Remove the skin before eating.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lime juice
Adds acidity that brightens flavor and begins to tenderize the surface of the meat.
Garlic
Contributes pungent aroma and savory flavor to the marinade.
Soy sauce
Adds salty, savory depth and helps the hens brown on the grill.
Orange zest
Adds aromatic citrus oils that complement the lime.
Red pepper flakes
Adds mild heat and pungency to the marinade.

The step that matters

Boil the reserved marinade before basting. The marinade has been in contact with raw poultry, so boiling it for 2 minutes makes it safe to brush onto the hens during grilling.
