What each ingredient does

Russet potatoes
Starchy flesh that breaks down into a fluffy, light mash when boiled and whipped.
Milk
Adds moisture and loosens the mash to a smooth, creamy consistency.
Mayonnaise
Adds fat and moisture, contributing to a rich, smooth texture.
Butter or margarine
Adds fat for richness and a silky mouthfeel in the finished mash.
Garlic
Roasting mellows its sharp bite, giving the mash a sweet, nutty aroma.

The step that matters

Whip at low speed only until smooth. Overworking potato starch at high speed releases excess starch and makes mashed potatoes gummy and dense. Brief, gentle mixing keeps them light and fluffy.

Swap the white pepper

How well each one fits the dish's main ingredients (potato, milk, butter, garlic):

  1. Parsleyfits better
  2. Thymefits better
  3. Rosemaryfits better
  4. White pepperthe original
