What each ingredient does

Butter
Creams with the sugars to trap air, giving the cookies a tender, rich texture.
All-purpose flour
Provides the main structure that holds the cookies together as they bake.
Sugar and brown sugar
Add sweetness and, with baking soda, help the cookies brown and spread.
Oil
Adds moisture and softness, keeping the cookies tender after baking.
Egg
Binds the dough and adds structure as it sets in the oven.
Baking soda
Reacts to lift and spread the dough and encourage browning.

The step that matters

Bake for 12 minutes, or until lightly golden brown. Cookies continue to firm up as they cool, so pulling them when lightly golden keeps them from drying out or turning hard and overly crisp.
