Why it works: Lime and cumin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,216 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Prepare
Preheat oven to 450°F.
Toss turkey with lime juice and season with salt and pepper.
Heat 1½ tablespoons oil in a 10‑inch heavy skillet over moderately high heat until hot but not smoking, then sauté bell peppers, stirring, until crisp‑tender, about 3 minutes. Transfer to a bowl.
Heat remaining ½ tablespoon oil in skillet over moderate heat and cook garlic, cumin, and oregano, stirring, 1 minute. Stir in beans and cook, stirring, until heated through, about 1 minute. Season with salt and pepper.
Assemble and bake
Make 2 layers each of corn chips, sautéed peppers, beans, turkey, cheese, scallion, and cilantro in a 3‑quart shallow baking dish.
Bake nachos in middle of oven until cheese is melted, 6 to 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Leftover roast turkey meat
- Provides the main protein, with lime juice adding brightness to the shredded meat.
- Black beans
- Add body, soft texture and earthy substance that makes the nachos more filling.
- Corn tortilla chips
- Form the crisp base layers that hold the toppings together.
- Jalapeño jack cheese
- Melts over the layers to bind the toppings and add richness and saltiness.
- Bell peppers
- Add sweetness and a crisp-tender texture when sautéed before layering.
The step that matters
Sautéing the bell peppers until crisp-tender. Cooking them just until tender-crisp keeps their sweetness and texture; overcooking makes them soft and watery, which dilutes the layers.
Swap the orange
How well each one fits the dish's main ingredients (turkey, meat, lime, pepper, garlic, clove, cumin):
- Avocadofits better
- Lemonfits better
- Mangofits about as well
- Orangethe original
Fit is the average pairing score against turkey, meat, lime, pepper, garlic, clove, cumin. Candidates are from the same food group and used in at least 100 recipes.
