Ingredients

Directions

Cook the potatoes

  1. Put all potatoes in a pot and add hot water just to the top of the potatoes, barely covering them.

  2. Add salt to the water, bring to a boil, and cover the pot.

  3. Simmer for about 15 minutes or until the garlic is soft, avoiding a rolling boil.

  4. If the potatoes are boiling, reduce the heat and continue cooking for a couple more minutes.

  5. Check doneness by squeezing the potatoes with tongs; if they crumble, they are done.

Mash and season

  1. Drain the potatoes in a colander and return them to the pot.

  2. Mash the potatoes with a potato masher, adding a little of the dairy mixture as needed to reach desired consistency.

  3. Taste the mash and adjust seasoning if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Russet potatoes
Their high starch content gives the mash a light, fluffy texture.
Red potatoes
Their lower starch and waxier flesh give the mash a denser, creamier body.
Buttermilk
Adds moisture and a mild tang that balances the richness of the potatoes.
Heavy cream
Adds fat for a smooth, rich mouthfeel.
Garlic
Softens during simmering and adds a mellow, savory aroma to the mash.

The step that matters

Simmer gently instead of boiling hard. A rolling boil tumbles the potato chunks against each other and the pot, breaking them apart and making the cooked potatoes waterlogged. Gentle simmering cooks them evenly so they stay intact and drain to a fluffier mash.

Swap the clove

How well each one fits the dish's main ingredients (potato, buttermilk, cream, garlic):
