What each ingredient does

Eggs
Bind the batter and give the cake its airy, set structure as they cook.
Flour
Provides the structure that holds the cake together as it bakes.
Salad oil
Keeps the crumb moist and tender after baking.
Sugar
Adds sweetness and helps the cake brown and stay moist.
Baking soda
Reacts to lift the batter so the cake rises in the oven.
Carrots
Add moisture and natural sweetness to the crumb.

The step that matters

Adding the dry ingredients in batches. Adding the flour mixture gradually and beating only until combined keeps the batter smooth. Overbeating develops too much gluten, which makes the cake tough and dense.
