What each ingredient does

Crescent dough
Forms the flaky, tender pastry that wraps the filling and browns in the oven.
Pepperoni
Adds savory flavor, and its fat renders during baking to moisten the dough.
String cheese
Melts inside the roll, adding richness and a creamy, stretchy texture.
Italian seasoning
Contributes herbal, aromatic flavor throughout the filling and crust.

The step that matters

Pinch the seams to seal. If the seams are not sealed well, melting cheese and rendering pepperoni fat can leak out during baking, leaving the rolls dry and the filling uneven.
