Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Smiley Fries
Ingredients
Directions
Prepare the dough
In a large bowl mix mashed potatoes, flour, breadcrumbs, cornstarch and egg. Season with salt and pepper. Mash with a fork until a dough forms.
Roll dough out between two pieces of waxed paper to ¼ inch thick. Carefully peel off the top piece of waxed paper.
Cut out 1½-inch circles, using the rim of a glass. Using the end of a drinking straw, cut out two circles for the eyes. Use a spoon to cut out a mouth.
Fry and serve
Pour canola oil into a large pot to a depth of 2 inches. Heat until it reaches 350°F on a deep-fry thermometer. (Or add a pinch of dough to the oil; when it sizzles, the oil is ready.)
Working in batches, cook fries in oil until golden brown and crispy, 2 to 4 minutes, flipping halfway through.
Transfer to a paper towel–lined plate; sprinkle with salt. Serve with ketchup.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Mashed potatoes
- Provides the bulk and moisture that form the dough.
- Flour
- Adds structure so the dough holds its shape when rolled and cut.
- Cornstarch
- Helps the fries turn crisp when fried.
- Egg
- Binds the dough together.
- Breadcrumbs
- Absorb moisture and add texture to the dough.
The step that matters
Heating the oil to temperature. If the oil is too cool, the fries absorb grease and turn soggy; if it is too hot, the outside browns before the inside cooks. Holding the oil near 350°F gives a golden, crisp exterior.
Swap the potato
How well each one fits the dish's main ingredients (flour, egg, pepper, canola oil, ketchup):
- Shallotfits better
- Capsicumfits better
- Horseradishfits better
- Potatothe original
Fit is the average pairing score against flour, egg, pepper, canola oil, ketchup. Candidates are from the same food group and used in at least 100 recipes.
