Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the pudding its light, airy structure, while yolks add richness and set the custard.
Sugar
Sweetens the pudding and helps stabilise the whipped egg whites.
Lemons
Juice and peel add bright acidity and lemon aroma to the sponge.

The step that matters

Fold in the egg white mixture. Folding gently keeps the whipped whites full of air. Stirring or deflating them makes the pudding dense, so it will not rise as light.

Swap the lemon
