What each ingredient does

Potatoes
Provide the starch and body that hold the dumplings together as they cook.
All-purpose flour
Adds structure to the dough so the dumplings keep their shape in boiling water.
Bryndze cheese
Melts over the hot dumplings, adding salty richness and a creamy coating.
Bacon
Adds savory fat and crisp texture against the soft dumplings and melted cheese.

The step that matters

Testing a dumpling for doneness. Dumplings made from grated potato and flour need to cook through at the center. Removing one to check that it is fully cooked before draining prevents doughy, undercooked centers.

Swap the potato

How well each one fits the dish's main ingredients (flour, cheese):

  1. Mustardfits better
