Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Starchy base that mashes into the soft body of the dish.
Milk
Adds moisture and softness, and carries the scallion flavour into the potatoes.
Scallions
Contribute a mild onion aroma that flavours the milk and the mash.
Butter
Adds richness and fat, served melted for flavour and moisture.

The step that matters

Adding the scallion-infused milk. Potatoes absorb liquid as they are mashed, so adding milk gradually until the mixture is wet and soft prevents a stiff or gluey texture. Overworking mashed potatoes also releases starch, which makes them gummy.

Swap the potato

How well each one fits the dish's main ingredients (milk, pepper, butter):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Tomatofits less well
  4. Asparagusfits less well

Fit is the average pairing score against milk, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
