Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Red-skinned or russet potatoes
Starch provides the bulk; their interior turns fluffy while the exterior crisps during roasting.
Olive oil
Fat conducts heat to the potato surface, promoting browning and crispness and carrying the seasoning.
Flour
A dusting that absorbs surface moisture and helps form a crisp, browned crust.
Garlic powder
Adds savory aroma and flavor that spreads over the potatoes with the oil.

The step that matters

Let the potatoes dry before coating. Surface moisture turns to steam in a hot oven and prevents browning, so drying after the flour dredge lets the coating set and crisp.

Swap the potato

How well each one fits the dish's main ingredients (pepper, olive, garlic, flour):

  1. Eggplantfits better
  2. Spinachfits better
