What each ingredient does

Overripe plantain
Provides the starchy, sweet base that becomes soft inside and browns on the outside when fried.
Vegetable oil
Conducts heat to cook the mixture quickly and gives the outside a crisp, browned surface.

The step that matters

Keep the oil hot but below smoking. Oil that is too cool lets the mixture absorb grease and turn heavy, while oil that smokes scorches the outside before the inside cooks. Holding it just under smoking gives an even, golden crust.
