What each ingredient does

Potatoes
Form the crisp-edged slices and fluffy interior once fried.
Lard
Conducts heat for frying and gives the slices a rich, crisp surface.

The step that matters

Dry the potatoes well before frying. Surface water turns to steam in hot fat, causing spattering and soggy patches. Drying the slices lets the fat crisp the surface instead of boiling it.
