Ingredients

Directions

Prepare

  1. Peel the ripe plantains and cut them into diagonal slices about ½ inch thick.

  2. Heat vegetable oil in a deep frying pan or pot over medium‑high heat until the oil is hot enough to submerge the plantain slices.

Fry and serve

  1. Add the plantain slices to the hot oil in batches, frying them for about 2–3 minutes on each side until golden brown and crispy.

  2. Use a slotted spoon to remove the fried plantains from the oil and place them on paper towels to drain excess oil.

  3. While the plantains are still hot, sprinkle them with a pinch of salt to enhance their flavor.

  4. Serve the gonja while warm as a snack or side dish.

What each ingredient does

Plantains
Starch that softens inside and caramelises on the outside, giving sweetness and a tender bite.
Vegetable oil
Conducts heat to crisp and brown the slices while adding richness.

The step that matters

Keep the oil hot and fry in batches. Adding too many slices at once drops the oil temperature, so the plantains soak up oil instead of browning and crisping. Frying in small batches keeps the oil hot enough for a crisp, golden surface.
