What each ingredient does

Sweet potatoes
Provide the bulk of the dish and a soft, starchy texture once cooked through.
Mushrooms
Soften and brown in the pan, adding savoury depth and a meaty texture.
Onion
Softens and sweetens as it cooks, forming the flavour base of the dish.
Garlic
Adds pungent aroma that mellows and deepens as it sautés with the onion.
Paprika
Contributes mild sweet-smoky colour and aroma to the spiced mushrooms.
Cumin
Adds warm, earthy aroma that comes out when bloomed in the hot oil.

The step that matters

Sautéing the mushrooms until softened and slightly browned. Mushrooms release water and then brown only when the pan is hot and not crowded. Browning builds savoury flavour, and spices added too early on wet mushrooms can scorch or taste dull.
