Directions

Infuse the butter

  1. Melt the butter in a small saucepan.

  2. Stir in the cannabis.

  3. Cook slowly over a low temperature for 2–3 hours, not allowing it to boil or exceed 200 °F (93 °C).

  4. If desired, strain the butter to remove the cannabis solids.

Make the batter

  1. Melt the chocolate chips in the microwave or over a double boiler.

  2. Combine the melted chocolate and infused butter, stirring until smooth.

  3. Stir in the sugar.

  4. Allow the mixture to cool if needed.

  5. Stir in the eggs, vanilla, salt, and lemon zest until smooth.

  6. Fold in the flour just until combined.

  7. Transfer the batter to a greased and/or parchment-lined pan.

Bake

  1. Bake at 360 °F/180 °C for about 20–25 minutes, or until a toothpick inserted in the center comes out without any batter on it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Carries the infused cannabis and adds fat for moisture and a rich, tender crumb.
Chocolate chips
Melted chocolate adds deep flavour and fat that gives a dense, fudgy texture.
White granulated sugar
Sweetens the brownies and helps keep the crumb moist and tender.
Eggs
Bind the batter and set during baking to give the brownies structure.
Self-raising flour
Contains a raising agent that helps the brownies rise and lighten slightly.

The step that matters

Keep the butter below a boil during infusion. High heat can scorch the butter and make it taste bitter, and it makes the infusion harder to control. A slow, low heat extracts flavour gently and keeps the butter usable for the batter.

Swap the lemon

How well each one fits the dish's main ingredients (butter, chocolate, sugar, egg, vanilla, flour):

  1. Coconutfits better
  2. Figfits better
  3. Raisinfits better
  4. Lemonthe original

Fit is the average pairing score against butter, chocolate, sugar, egg, vanilla, flour. Candidates are from the same food group and used in at least 100 recipes.
