Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey wings
Provide the main meat, which becomes tender and flavorful as it cooks.
Red bell peppers
Form the smooth, sweet-savoury base of the pepper sauce.
Vegetable oil
Carries flavour and helps the pepper paste fry and thicken in the pot.
Onions
Add savoury depth and body to both the seasoning and the pepper paste.

The step that matters

Simmering the pepper paste until thickened. Blended raw pepper tastes grassy and watery. Simmering in oil cooks off the moisture and mellows the raw flavour, so the sauce thickens and tastes rounded before the wings are added.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (turkey, onion, garlic, ginger, thyme, pepper):

  1. Sagefits better
  2. Marjoramfits better
  3. Rosemaryfits better
  4. Clovethe original

Fit is the average pairing score against turkey, onion, garlic, ginger, thyme, pepper. Candidates are from the same food group and used in at least 100 recipes.
