Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked rice
Forms the bulk of the dish and absorbs the seasonings and sauces.
Eggs
Form the omelette wrapper that encloses the fried rice.
Chicken fillets
Provide protein and a firm, savoury texture in the rice.
Garlic
Adds aroma and savoury flavour when fried until brown.
Shallots
Add sweetness and depth of flavour when fried until brown.
Tomato sauce
Adds acidity, sweetness and colour to the rice.

The step that matters

Cooking the omelette. The egg must be cooked enough to set and brown on the bottom so it holds the rice when folded, but cooked too long it becomes dry and tears. Flipping gently keeps the wrapper intact.
