Explore the science

What each ingredient does

Quinoa
Forms the main body of the dish; its starch and protein set into a tender, fluffy texture when cooked.
Water
Hydrates the quinoa grains during soaking and provides the liquid that cooks them through.

The step that matters

Simmer on the lowest heat. Gentle heat lets the water be absorbed slowly so the grains cook through and soften without bursting or scorching on the bottom of the pot.
