Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatillos
Provide the tart, bright base flavor of the green chili sauce.
Monterey jack cheese
Melts into the sauce to make it creamy and rich.
Unsalted butter
Enriches the sauce and forms the base for the flour roux.
All-purpose flour
Thickens the cheese sauce when cooked with butter and stock.
Chicken stock
Adds savory liquid that loosens and flavors the cheese sauce.
Roasted chicken
Supplies the shredded meat that makes the nachos substantial.

The step that matters

Melting the cheese sauce gently. Cheese proteins tighten and turn grainy or oily when overheated, so the sauce should be melted slowly over low heat and stirred until smooth.
