  3. Drain and rinse the sauerkraut well with cold water to prevent further cooking.

  3. Season with salt and pepper to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sauerkraut
Provides the sour, tangy flavour that defines the filling.
Onion
Adds sweetness and savory depth as it softens and turns translucent.
Butter
Adds richness and fat, carrying flavour through the filling.

The step that matters

Squeeze the sauerkraut dry. Excess liquid left in the kraut makes the filling wet and soggy, which can tear dough and dilute flavour. Squeezing removes this water before cooking and filling.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
