What each ingredient does

Boneless chicken meat
Provides the main protein, which browns on frying and becomes tender as it simmers in the sauce.
Lemon juice
Acidity in the marinade that helps tenderize the chicken and brighten the flavor.
Red onion
Softens and sweetens as it sautés, forming the base of the sauce.
Tomatoes
Break down into the sauce, adding moisture, body and acidity.
Canola oil
Conducts heat for browning the chicken and carries the spices in the sauce.
Tomato ketchup
Adds sweetness and acidity that rounds out the sauce.

The step that matters

Frying the marinated chicken until golden brown. Browning the chicken creates flavor through the Maillard reaction. Frying it in batches with enough space in the pot keeps the surface browning rather than steaming, and the chicken must then cook through during simmering.
