Yataklete Kilkil

Time15–20 minutes

Ingredients

Directions

Make the spiced base

  1. Heat the niter kibbeh in a large skillet or frying pan over medium heat.

  2. Add the finely chopped onion to the skillet and sauté until it becomes translucent.

  3. Stir in the minced garlic, grated ginger, turmeric, cumin, paprika, and salt. Mix well to coat the onions with the spices.

Cook the vegetables

  1. Add the sliced carrots, diced potatoes, green beans, cauliflower florets, and broccoli florets to the skillet. Stir to combine the vegetables with the spice mixture.

  2. Cover the skillet with a lid and cook the vegetables for about 15–20 minutes, or until they are tender but still retain their vibrant colors. Stir occasionally to ensure even cooking.

  3. Add the thinly sliced cabbage to the skillet and cook for an additional 3–5 minutes, or until the cabbage becomes slightly wilted.

  4. Squeeze the lemon juice over the vegetables and give them a final toss to incorporate the flavors.

Serve

  1. Remove from heat and transfer to a serving dish. Garnish with freshly chopped cilantro or parsley.

  2. Serve hot as a main course, accompanied by injera or rice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Niter kibbeh or butter
Provides fat and rich flavor for sautéing the onion and spices.
Onion
Softens into a sweet, savory base that carries the spices.
Potatoes
Hold their shape while cooking and add starch that thickens the stew slightly.
Carrots
Add natural sweetness and firm texture that holds up during simmering.
Cauliflower and broccoli
Add mild bitterness and tender texture that absorbs the spiced cooking liquid.

The step that matters

Cooking the vegetables with the lid on. Covered cooking traps steam so the dense vegetables become tender. Stirring occasionally prevents scorching on the pan base, while overcooking turns the cauliflower and broccoli mushy and dulls their color.

Swap the onion

How well each one fits the dish's main ingredients (butter, clove, garlic, ginger, turmeric, cumin, carrot):

  1. Parsnipfits better
