Algerian Potato Fritters

Ingredients

Directions

  1. Bring a sizable pot of salted water to a boil , then place the potatoes with their skins in the boiling water. Cook for at least half an hour or until they become tender, then drain.

  2. Peel the potatoes and mash them.

  3. Mix in the breadcrumbs, garlic, onion, cumin, turmeric, parsley, beaten eggs, salt, and pepper. Combine all the ingredients carefully. If the mixture seems too tight, add more breadcrumbs.

  4. Shape the potato mixture into 2- inch (5 cm ) diameter patties.

  5. Pour sufficient oil for deep frying into a large pot, and heat to 350°F (175°C).

  6. Lightly coat the patties with flour on both sides. Shake off the extra flour, and deep fry the patties until golden brown on all sides.

  7. Remove the maaqouda from the oil, and drain them on paper towels .

  8. Serve with freshly-squeezed lemon juice .
