Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tempeh
Provides the firm, protein-rich base that browns and holds its shape when baked.
Egg
Binds the breadcrumb coating to the tempeh so it stays attached during baking.
Breadcrumbs
Form a crisp, golden coating that gives the nuggets their crunchy texture.
Yogurt
Adds moisture and tang to the dipping sauce.

The step that matters

Brown the tempeh before steaming. Browning in hot oil builds flavour and colour through the Maillard reaction, while the water-and-steam step softens the tempeh and reduces its bitterness. Skipping the browning leaves the nuggets pale and flat-tasting.

  2. Parsleybetter flavor fit
  3. Corianderbetter flavor fit
  4. Clovethe original

Fit is the average pairing score against egg, onion, garlic, pepper, yogurt. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
