Why it works: Cinnamon and nutmeg match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 11,917 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Bind the batter and add structure as they set in the oven.
- Mashed potatoes
- Add moisture and a tender, soft crumb to the cake.
- Butter
- Adds richness and tenderness and helps carry the flavor of the spices.
- Flour
- Forms the structure that holds the cake together as it bakes.
- Sugar
- Sweetens the cake and helps it brown and keep moisture.
- Baking powder
- Releases gas in the heat so the cake rises and becomes light.
The step that matters
Cream the sugar and butter. Beating butter with sugar traps air in the fat, which gives the cake lift and a fine, even crumb. Butter that is too warm or too cold will not hold that air well.
Swap the walnut
How well each one fits the dish's main ingredients (chocolate, milk, flour, vanilla, clove, cinnamon, nutmeg):
