Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air and set into the cake's light, open structure as it bakes.
Sugar
Sweetens the cake and helps stabilize the beaten egg whites.
Flour
Provides structure once folded in, holding the airy foam together as it sets.
Cream of tartar
Acidifies the egg whites, helping them whip stiffer and hold their volume.
Lemon extract
Adds lemon aroma and flavor to the cake.

The step that matters

Folding in the flour. Cut and fold gently so the whipped egg whites keep their trapped air. Stirring or deflating the foam makes the cake dense and flat after baking.

Swap the lemon

Fit is the average pairing score against sugar, flour, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
