Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the batter and the separately beaten whites, folded in last, lighten its texture.
Butter
Fat that adds richness and a tender crumb.
Sugar
Sweetens the batter and helps it brown during baking.
Flour
Provides the structure that holds the cupcakes together.
Baking soda
Reacts with the lemon juice to produce gas that helps the cupcakes rise.
Lemon juice
Adds acidity and bright flavor, and activates the soda.

The step that matters

Fold in the beaten whites of the four eggs.. Beaten egg whites trap air that leavens the batter. Folding gently, rather than stirring, keeps that air in, so the cupcakes stay light instead of dense.
