What each ingredient does

Bacon
Renders fat that cooks the mushrooms and adds salty, smoky flavour.
Mushrooms (in the method)
Absorb the bacon fat and brown gently, adding savoury, earthy flavour.
Butter
Adds richness and helps carry flavour in the finished dish.

The step that matters

Adding the mushrooms to the bacon. Mushrooms are mostly water, so frying them slowly lets that moisture evaporate and the surfaces brown instead of steaming. Adding them too early can overcook the bacon or make the mushrooms soggy.

Swap the mustard

How well each one fits the dish's main ingredients (butter, vinegar):

  1. Mustardthe original
  2. Shallotfits about as well
  3. Onionfits about as well
  4. Cucumberfits about as well

Fit is the average pairing score against butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
