Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raisins
Provide the main bulk and chewy sweetness of the filling.
Sugar
Adds sweetness and helps thicken and preserve the filling as it bakes.
Lemons
Add acidity and aroma from the rind and juice to balance the sweetness.
Eggs
Bind the filling and help it set when baked.

The step that matters

Fold the edges together carefully. Sealing the pastry tightly keeps the filling inside while baking, so juices do not leak out and burn on the tray.

Swap the lemon
