Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a smooth, creamy body to the sauce.
Sugar
Sweetens the sauce and, creamed with butter, helps it turn light.
Eggs
Thicken the sauce as they heat and give it body.
Lemon
Provides the acidity and bright aroma that define the sauce.

The step that matters

Cook in a double boiler without boiling. Egg proteins thicken gently at moderate heat; if the sauce boils, the eggs can curdle and turn grainy instead of smooth.
