Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the gluten network that gives the rolls their structure and chew.
Mashed potato
Adds moisture and softness, helping the rolls stay tender after baking.
Shortening
Adds fat that tenderizes the crumb and makes the dough easier to roll.
Yeast
Produces gas during rising, which leavens the dough and makes it airy.
Egg
Adds structure and richness to the dough.
Sugar
Feeds the yeast and adds mild sweetness and browning.
