Chicken Julienne

Ingredients

Directions

Prepare

  1. Split the chickens down the back as for broiling, lay them breast down in a baking pan.

  2. Fill the depression inside the ribs with equal quantities of finely minced onion, carrot, celery and peas.

  3. Season with salt, a little pepper, and several small pieces of butter, add one-half cup of hot water.

Cook and make the sauce

  1. Cook in a hot oven for one-half hour, or until the vegetables are tender.

  2. Remove the vegetables and turn the chickens over to brown.

  3. Make a sauce by adding flour to the liquid in the pan, and the vegetables and one-half cup of cream.

  4. Pour the sauce around the chicken and garnish with sweet potato croquettes.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Shared aroma: acetic acid (sour, vinegar).

Cream and pepper barely smell alike, yet cooks put them together in 21,449 recipes: they work on texture and structure more than aroma.
