Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Sugar (in the method)
- Adds sweetness and keeps the frozen texture softer rather than rock-hard.
- Lemon juice
- Provides sharp acidity that balances the sweetness and brightens the flavour.
- Orange juice
- Adds fruity aroma and extra acidity alongside the lemon.
- Egg white
- Whipped to a foam, it traps air and makes the sherbet lighter.
The step that matters
Adding the beaten egg white. Add the foam only when the mixture is nearly frozen. If it is too liquid, the foam deflates and the sherbet turns dense; if it is fully frozen, the foam will not blend in evenly.
Swap the orange
How well each one fits the dish's main ingredients (lemon, egg):
- Orangethe original
- Limefits about as well
- Raspberryfits less well
- Blueberryfits less well
Fit is the average pairing score against lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
