The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat for tenderness and a rich flavor in the dough.
Flour
Provides the structure that holds the dough and filled cookies together.
Eggs
Bind the dough and add structure and richness.
Cream tartar
Acidifies the dough and reacts with soda to help the cookies rise.
Soda
Reacts with the acid in the dough to produce gas for rising and light browning.
Raisins
Add sweetness and moisture to the filling.

The step that matters

Cook the filling until thick. The flour thickens the filling as it cooks; if it is too thin it can run out of the cookies, and if overcooked it can become stiff and hard to spread.

Swap the raisin

How well each one fits the dish's main ingredients (sugar, butter, flour, vanilla, milk, cream, egg):

  1. Figfits about as well
  2. Coconutfits about as well
  3. Raisinthe original
  4. Strawberryfits about as well

Fit is the average pairing score against sugar, butter, flour, vanilla, milk, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
