Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air and set into a light, delicate structure when steamed.
Sugar
Sweetens the dessert and helps stabilise the whipped egg whites.

The step that matters

Steam for 20 minutes. Steam gently and keep the water boiling steadily. Overheating can make the egg structure weep, pock or turn rubbery, while too little heat leaves the centre runny.

Swap the lemon
