A French Fritter Batter

Ingredients

Directions

  1. Put a heaping cupful of flour into a bowl, add two yolks of eggs, a tablespoonful of olive oil, and one or two spoons of lemon juice. Stir it well, adding water enough to give it the thickness of ordinary batter. This may be used at once, but can be put away for a day or so. Before cooking stir in the whites of two eggs beaten to a very stiff froth. Add a pint of fruit cut in small pieces. Makes a delicious fritter. When done, sprinkle sugar over the tops.
