What each ingredient does

Green tomatoes (in the method)
Form the main body of the dish, softening into tender slices when fried.
Thick cream
Forms a rich sauce that adds fat and a smooth, creamy texture.
Flour
Thickens the cream into a sauce that coats the tomatoes.
Butter (in the method)
Fries the tomatoes to a golden brown and adds rich flavour.

The step that matters

Thicken the cream with flour. Flour must be stirred into the hot cream and cooked through, or the sauce stays pasty and tastes raw. Stirring keeps it smooth without lumps.

Fit is the average pairing score against cream, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
