Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the filling and whites, beaten stiff, form the browned meringue topping.
Flour
Cooked with the milk, it thickens the filling so it sets smoothly rather than runny.
Sugar
Sweetens the filling and, in the topping, helps the meringue brown in the oven.
Lemon
Provides the acidity and aroma that give the filling its tart lemon flavour.
Milk
Adds moisture and body, combining with the flour and egg yolks to form a custard-like filling.

The step that matters

Adding the flour and milk to the lemon mixture. Flour is cooked in milk first, so it thickens properly; the filling should be stirred together well so the starch and yolks combine evenly without lumps, giving a smooth set after baking.
