Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a silky mouthfeel to the filling.
Bread crumbs (in the method)
Soak up the liquids and thicken the filling so it holds together in the shell.
Sherry
Adds acidity and aromatic depth that brightens the rich crab.
Sweet oil
Carries flavour and keeps the filling moist and tender.

The step that matters

Browning the top in the oven. Breadcrumbs brown quickly under dry heat, so a few moments too long can scorch them before the filling is hot. Watch closely and stop once the top is golden.

Swap the parsley

How well each one fits the dish's main ingredients (butter, sherry, pepper):

  1. Thymefits about as well
  2. Parsleythe original
  3. Sagefits less well
  4. Clovefits less well
