Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the batter and whites, beaten, lift it to give the soufflé its airy structure.
Flour
Adds body to the batter, helping it hold its shape as it bakes.
Boiled milk
Supplies liquid that makes the batter moist and tender.
Butter
Adds richness and fat, softening the texture of the baked soufflé.

The step that matters

Folding in the beaten whites. Whites hold air only when beaten well, and overmixing them into the batter deflates the foam, so the soufflé rises less. Fold gently to keep the lift.
