Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the hot milk and form the soft body of the pudding.
Milk
Supplies moisture that softens the crumbs and sets into a custard.
Eggs
Yolks enrich and set the custard; whites whip into the topping.
Butter
Adds fat for richness and a tender, smooth texture.
Sugar
Adds sweetness and helps the topping brown in the oven.
Lemon
Rind adds aroma and juice adds acidity that brightens the sweetness.

The step that matters

Bake until brownish yellow, no longer. Egg proteins in the custard set as they heat, so overbaking makes the pudding dry and rubbery. Browning in the topping comes from the sugar, so colour is the cue to stop.

Swap the lemon

How well each one fits the dish's main ingredients (milk, bread, sugar, egg, butter):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well
  4. Lemonthe original

Fit is the average pairing score against milk, bread, sugar, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
