Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid mixture into a soft, sliceable structure as it cools.
Eggs
Egg whites beaten in add air for a light texture, and yolks thicken the custard.
Sugar
Sweetens the pudding and balances the tartness of the lemon.
Milk
Forms the base of the custard, adding richness and a creamy body.
Lemon
Juice adds acidity and brightness, while the grated rind adds aroma.

The step that matters

Beat the gelatin mixture until very light. Whipping the egg whites into the warm gelatin traps air in the liquid. Beating thoroughly makes the foam fine and stable, which gives the pudding its light, airy texture once set.
